Dusty brown mound of yummy goodness. Bay Area’s See’s Candies sells this “sweet” potato every St. Patrick’s Day, which means I wait an entire year just to have it.
It isn’t the most appealing looking thing. I avoided it for many years but then someone brought it into work and it was a Hallelujah moment.
The cocoa dusted potato protects a fluffy, marshmallow-like nougat that is the same as the filling for their Divinity truffle. So if you do miss having it other times of the year, you could get the truffle, but eating it in a potato form is just more fun. The walnuts on the inside add great crunch. The pine nuts are used for “eyes.”
