Donkey Piñata Cookies

Pow! Cookies with a surprise inside. They were featured on Bon Appetit’s site last May and I was absolutely giddy at how adorable they were so I made the effort to bake them for Cinco de Mayo this year. They’re a bit tedious so make an activity of it with friends, drinks and guacamole.

To get the vibrant colors, cookie dough is dyed with food coloring. I use gel because it gives a brighter color. You’ll end up with 11 pieces of dough, 1 portion of black for the base and 5 colored portions, divided in half so the layering can be repeated. The dough is then rolled out, stacked and the entire block is frozen so it can be sliced like you would for an ice box cookie dough log.

The recipe says to bake the slices and when they’re still warm from the oven, cut out the donkey shape with a cutter. I didn’t have a cutter so I printed out an image of a donkey and individually cut each slice prior to baking. Way too much work! I got tired after a while, hence the impromptu P A R T Y and margarita shapes.

So the donkey cookies spread and got a little puffy but they were still cute. I piped frosting on the middle and bottom cookies, then stacked them on top of each other, filled the middle with little rainbow chocolate chips and sandwiched with the top cookie.

Recipe Notes:

  • If you want to cut out shapes prior to baking, make sure the dough you use retains it’s shape after baking. If not, then per the original recipe, cut the shapes out after baking to avoid spreading.
  • I used a rainbow chip crunch filler because the middle cookie was too thin to hold mini M&Ms, so keep that in mind when slicing the dough block. The slices should be 1/4″ thick.

Materials:

Donkey Cookie Cutter (Democrat)- this is the shape that the original creator used. It comes in 2″ and 4″ sizes.

Donkey Cookie Cutter- this is the shape I traced. I liked that it was a little more pudgy. I made the shape 3″ W x 2″ H.

Wilton Gel Neon Food Colors- I bought this set with Magenta, Orange, Purple and Teal.

Ateco Food Colors- I typically use Ateco gel colors and I had this set for Black and Yellow.
