Mexican cuisine is one of my favorites to cook from. I get to use avocado, which when I make guacamole I can easily consume 2 on my own and at that point is it really a good fat or just bad because of excessive consumption? The colors of the different ingredients also make for a visually fun eating experience. For breakfast this week I made a tostada from the book and blog with the same name, The Sprouted Kitchen. It’s a take on the huevos rancheros. I like the use of the tostada for crunch.

Here are few Valentine’s Day treats that I’ve done in the past. You can celebrate all day with ideas for brunch, a treat for the office, and desserts.
2007: Heart-shaped French Toast
So simple. Here I just used white bread and cut out hearts with a knife. Don’t worry I didn’t waste. I ate the scrap pieces of bread.

After dessert, I love making brunch. I’ve gotten really good at savory items but when there are a lot of people over I jump at the chance for sweet things- pancakes, french toast, crepes. It’s like having dessert in the morning. Every Thanksgiving and Christmas I make a sweet brunch item. It’s a warm up to cooking the holiday dinner.
Last year, I made pumpkin cinnamon buns for Christmas dessert. It could have been for brunch but after waiting for the dough to rise two times, it was a bit late. These are probably better suited for dessert anyway with all the sugar in them

Using ricotta cheese, I created lemon ricotta pancakes for breakfast . The ricotta is the magic ingredient as it makes the pancakes so light that I managed to eat a stack of four.

My favorite meal of the day: Brunch. I don’t feel guilty about having a nice hearty meal. It is after all, two meals combined in one. This recipe for Mini Frittatas from Giada de Laurentiis is great. It’s really versatile. In fact you could build a fixings bar and let everyone sprinkle in the ingredients they want in the frittatas before baking them off.
Just a note, I used a regular cupcake/muffin size pan. Giada used a mini muffin pan to get bite-sized frittatas.

Inspired by my meal at Shopsins in New York. Shopsins is a diner- well not even, its just this open section of an inside food building, with creative brunch items such as slutty cakes, “Blister on My Sisters,” and most famous, the mac and cheese pancakes. I’ll admit I wasn’t going to even order the mac and cheese. The combination sounded gross. At the last minute, we got them and thank goodness. I would have regretted not eating these.
