After making Giada’s Pasta Ponza, I needed something sweet so I made Lemon Thyme Bars.
Close up. I like how the flecks of thyme show when you cut into the bars.
I liked the taste and texture of these, but if you’re expecting lemon bars, these are not it. As several reviewers mentioned on the Food Network site, these are more like shortbread cookies. Flaky buttery cookies with a lemon glaze, which sound good to me
Also, if you’re serving it to open-minded, adventurous eaters then this is a good recipe. I can definitely taste the thyme and liked it. One of my tasters said it was very prominent so it could be too strong for some.

recipe notes:
- I used 1/2 tablespoon of fresh thyme. The recipe calls for 2 tablespoons. I’m guessing that would be a lot stronger but I thought 1/2 tablespoon was just right.
- The strange thing about the recipe is the amount it makes. I pressed it into an 8 x 8″ pan but couldn’t spread it all the way. To get a decently thick bar (mine were about 1/2″ high), I could only spread into 3/4 of the pan. It made 6 bars. Yes 1 stick of butter for 6 bars.
- I used the full recipe of glaze even though I only had 6 bars. I thought it was the perfect amount.
