Just Berries: Olailleberry Pie

What to do with eight pounds of freshly picked olaillieberries. A lovely dilemma because now I have a good base ingredient to experiment with. I wanted a dessert that would showcase the fruit on its own so I thought, a pie. An olaillieberry pie filled to the brim of just the berries and a bit of sugar to bring out the natural sweetness.

A nice helping of pie with a thin crust and berries oozing out the sides.

All started with fresh olailleberries, approximately 6 cups

Juicy sweetened berries going into the crust. I heard, the trick to keeping the crust from becoming soggy is to put a layer of graham cracker or bread crumbs at the bottom. That way the juices from the berries will mainly absorb into that layer rather than the crust.

Dabs of butter to add a bit of richness and flavor to the pie.

Covered, crimped, glazed with egg wash and ready for the oven

Opened the oven just moments after the timer went off and a waft of buttery pie aroma blew into my face. Mmm. Now the hard part, waiting.

Day after and ready to eat.
