Fluffiest Pancakes & Pasta

Using ricotta cheese, I created lemon ricotta pancakes for breakfast and ricotta gnocchi. The ricotta is the magic ingredient as it makes both dishes very light and fluffy. Feels less filling. In the case of the pancakes, maybe not such a good idea because I was able to eat a stack of four.
